Chef Gia Pop-Up Dinner (with Gilda, the Copper Trailer) in Serenbe

Night two with Gilda, Gia’s new copper trailer — a cozy outdoor dinner with rich, seasonal dishes and a European twist. If you’ve been meaning to try one of Gia’s pop-ups, this is the one.

Boeuf Cheeks Bourguignon — $21

Beef cheeks, applewood bacon, baby carrots, chanterelle + crimini mushrooms, pearl onions, all braised in a deep wine sauce over pommes purée (GF)

Pappardelle à Homard with Champagne Cream Sauce — $26

Wild Atlantic lobster, heirloom cherry tomatoes, shallots, garlic confit, grapefruit zest, champagne cream sauce over wide pasta ribbons, parmesan, cracked pepper

Tarte Aux Champignons — $18

Crispy vegan pastry, petite mushroom mix, vegan cheese, truffle oil, toasted pine nut crust, served with salade verte (Vegan, GF)

Traditional Crème Brûlée — $8

Madagascar vanilla custard, brûléed sugar, fresh berries + mint (GF)
